
If you’re in the mood for some delicious Mexican food cooked at home, this Spicy Chipotle Shredded Beef is a very easy dish to pull off. Because it’s a crockpot meal, it’s perfect for busy parents. We usually make our shredded beef into burritos or shredded beef tacos, but it is also great in burrito bowls (like they have at Chipotle.)
This dish does have a little kick of spice to it, but it’s not excessive at all. Everyone at my house eats it without trouble, including my 2 1/2 year-old, so it isn’t that spicy.
Prep for this meal only takes about 5 minutes!

Here’s What You Will Need
- 4-6 lb boneless chuck rib roast, grassfed preferably
- 1 tsp garlic powder
- 1 T dried minced onion
- 1 t cumin
- 7-oz can of chipotle peppers in adobo sauce
- 1/4 cup water
- salt to taste
Step 1:
Spray the inside of the crockpot with cooking spray (for easy cleanup). If there is a lot of fat on your roast, you should trim some of it off first. If there is only a thin layer, just leave it since it adds flavor. Place your roast in the crockpot.

Step 2:
Season the top of your roast with the garlic powder, minced onion, cumin, and salt.
Step 3:
Make a few slits a couple inches deep in the top side of your roast, and place a chipotle pepper inside each slit. Pour the remaining peppers and all of the sauce over the top of the roast. Add about 1/4 cup of water to the crockpot around your roast.

Step 4:
Cook on low 8-12 hours.
Step 5:
Before serving, simply stir the roast with a fork to shred. It will be completely falling-apart-delicious! Serve it on tortillas or in a burrito bowl, and enjoy!
