
Blueberry crisp made from scratch is one of those recipes that is comfort food and a sweet treat all wrapped into one. And, it is surprisingly quick and easy to throw together! If you keep frozen blueberries in the freezer for smoothies, then it is likely you already have what you need to make it right now.
Any recipe that includes blueberries is a favorite of my husband, so last week when it was his birthday, I made this for him. It did not disappoint! I forgot to catch a picture of it after it came out of the oven, and my big crew polished it off before I realized it! So, the photo above is just before popping it in the oven. When it comes out, the top will be nice and golden brown and crunchy! Yum!
Simple Blueberry Crisp
For the Fruit Filling
5 cups of organic fresh or frozen blueberries
1-4 tablespoons sugar
3 tablespoons flour
For the Crisp Topping
1/2 cup old-fashioned oats
1/2 cup brown sugar
1/4 cup flour
1/4 teaspoon cinnamon
1/4 cup butter
Instructions
Step 1: Preheat the oven to 375º F.
Step 2: To prepare the filling, toss the fresh or frozen blueberries with the 3 tablespoons of flour and 1-4 tablespoons of sugar. Adjust the amount of sugar to your preference and the natural sweetness of the blueberries. Pour the filling into an 8×8 or 9×9 2-quart square baking dish.
Step 3: For the topping, in a medium bowl, combine the oats, brown sugar, flour, and cinnamon. Then, cut in the butter with a fork or a pastry blender until it looks like large crumbs.
Step 4: Spread the topping onto the filling. Bake for 30-35 minutes until filling on top is golden and crisp.
Serve warm with a scoop of vanilla ice cream for a classic dessert!
