With summer nearing its end, all the delicious fruit is easy to come by and for cheap! I decided it is the perfect time to buy some up and make some delicious popsicles to hang on to that summer feeling just a bit longer.
So the other day, I was at my local Sprout’s Farmer’s Market and could not resist the sweet smell of the peaches. So I loaded up a mesh produce bag and took some home. I’ve been thinking a lot lately about how I can repurpose things around my house, and I’d been wanting to try making frozen treats in my silicone baby food trays. I haven’t used the trays in a couple of years since Otis stopped needing baby food. So I decided to make some creamsicles!
These turned out SO great and my kids couldn’t get enough of them. To make them, here’s what you will need.
- 4 ripe peaches, peeled, pitted, and diced
- 1 can of full-fat coconut milk (the kind in the Asian food section)
- 1/4 cup of honey (use agave syrup to make them vegan)
- 6 drops of dōTERRA Wild Orange essential oil, or 1 teaspoon of orange zest
- 1/4 teaspoon of vanilla extract
- a pinch of cinnamon
First, pulse the peeled, pitted peaches in a food processor until they are a thick, smooth purée consistency. Add the rest of the ingredients and mix until combined. Pour into your popsicle molds and pop them in the freezer. After about 5-10 minutes when they have begun to thicken, go back and stick in your popsicle sticks so they will stay standing up. Of course, if you are using a popsicle mold set and not repurposing another container, just use it as you normally would. After a few hours, your peach orange creamsicles will be frozen and ready to enjoy!
