Dairy-free Crockpot White Chicken Chili

This is a hearty dairy-free recipe that is great for cooler weather or hot weather when you don't want to heat up the house with the oven! Feeds a hungry crowd. Great with a side salad and loaf of french bread.

  • 4-6 chicken breasts
  • 4 cans Great Northern beans, drained and rinsed
  • 1 8 oz can green chilies, diced
  • 1 large yellow onion, chopped
  • 1 T garlic, fresh minced or dried powder
  • 4-6 cups chicken broth
  • 1 can coconut milk
  • 1 t chili powder
  • 2 t cumin
  • juice from half a lime
  • 3 T cornstarch
  • 1 bunch cilantro, chopped
  • salt & pepper to taste


  1. Spray inside of crockpot with cooking spray.

  2. Add all ingredients except the cornstarch and cilantro to the crockpot. 

  3. Turn crockpot on high for 6-8 hours.

  4. Stir all ingredients together to let chicken fall apart and distribute.

  5. Remove 1-2 cups of liquid from crockpot and whisk in the cornstarch in a separate bowl. Once it is smooth, pour it back into the crockpot and stir to combine. 

  6. Let cook for another 20-30 minutes until the chili has thickened. 

  7. Stir in the chopped cilantro soon before serving. Serve with a side salad and a slice of bakery bread.
